Making Caribbean Cobb Salad With Salmon

0

Are you in the mood to eat the rainbow, this Caribbean-inspired Cobb salad is the place to start. A bit brighter than the traditional Cobb salad, this version combines fresh mango, creamy coconut dressing, and spiced salmon to create a punchy, spicy, filling meal. Crushed plantain chips and sweet bell pepper add a satisfying crunch. If you aren’t a salmon fan, you can easily swap out chicken, shrimp, or whatever protein you’re in the mood for!

Fresh veggies and a dynamite dressing are one thing, but here’s the real secret to good salad—season the lettuce! Sprinkle a pinch of salt on the lettuce before building your salad to make sure you have flavor in each bite.

This salad gets a lot of its flavor from the seasoning paste that’s rubbed on the salmon and used in the dressing. Since the paste has sugar in it, the outside of the salmon will start to brown much more quickly than it usually would. Don’t freak out if it starts to blacken—it’s not burnt.

All the the talk about this Caribbean Cobb Salad might have gotten you hungry, so here’s the recipe. Enjoy!

INGREDIENTS

4 tsp. light brown sugar

4 tsp. reduced-sodium soy sauce

1 tbsp. onion powder

2 tsp. garlic powder

1 tsp. cayenne pepper

1 tsp. dried thyme

1 tsp. ground ginger

1/2 tsp. ground allspice

2 tbsp. plus 2 tsp. fresh lime juice, divided

4 (4-oz.) salmon fillets

Kosher salt

Freshly ground black pepper

2/3 c. canned coconut milk

2 tsp. chopped fresh cilantro

1/4 c. plus 2 tbsp. neutral oil, divided

2 large heads of romaine lettuce, chopped

1 mango, peeled, finely chopped

1 large red bell pepper, seeded, finely chopped

1 avocado, sliced

4 scallions, sliced

1 c. chopped purple cabbage

1 c. plantain chips

3/4 c. cotija cheese

DIRECTIONS

In a small bowl, mix brown sugar, soy sauce, onion powder, garlic powder, cayenne, thyme, ginger, allspice, and 4 teaspoons lime juice until a thick paste forms. Season each salmon fillet with a generous pinch of salt and black pepper. Rub fillets with 2 tablespoons seasoning paste and let sit 10 minutes; reserve remaining seasoning paste.

In a small bowl, whisk coconut milk, cilantro, 1/4 cup oil, remaining 2 teaspoons lime juice, and reserved seasoning paste; set dressing aside.

In a large skillet over medium-high heat, heat remaining 2 tablespoons oil. Cook salmon until flesh easily flakes with a fork, 2 to 3 minutes per side (the marinade will blacken as the salmon cooks). Transfer to a plate.

Arrange lettuce on a platter or divide among plates; season with a pinch of salt. Add rows or small piles of mango, bell pepper, avocado, scallions, cabbage, and chips. Sprinkle with cheese and top with salmon.

Drizzle salad with half of dressing; season with a pinch of salt. Serve with remaining dressing alongside.

Make Ahead: Dressing can be made 2 days ahead. Store in an airtight container and refrigerate. Let come to room temperature and whisk before serving.

There you have it, this delicious salad will make a great lunch, make sure to try it out soon.

Transfer Update: Onyedika Pens 5 Year Deal With Club Brugge

Belgian top division side Club Brugge have confirmed the signing of Nigerian midfielder Raphael Onyedika from Danish club FC Midtjylland,

The club announced the signing of the Nigerian on their official website on Sunday.

The reigning champions of Belgian First Division A beat other suitors, including Serie A champions, AC Milan, to the signing of the youngster.

After winning the Danish league’s Young Player of The Year Award, following his impressive performances last season, Onyedika emerged as a top transfer target for a lot of European clubs, with the Italian champions the leading suitors.

Onyedika enjoyed a great season at Midtllyand last term and was instrumental to the club’s success, a display which saw Milan open negotiations with the Danish club to complete the signing of the Nigerian.

However, after having their second bid of €6.5m for the 21-year-old rejected, Milan dumped their chase for the player and shifted their focus to Bordeaux’s Jean Onana and Wolfsburg man Aster Vranckx.

After much speculation surrounding the future of the talented midfielder, Brugge on Sunday announced the arrival of the Nigerian.

Club Brugge and FC Midtjylland reached an agreement today about the definitive transfer of Raphael Onyedika,” the club wrote.

“Onyedika (21) is a defensive midfielder who can also play centrally in the defence. He was trained at the Nigerian FC Ebedei and came to Europe in 2019. After a loan to FC Fredericia, he broke through last season with the main squad of Midtjylland. Onyedika impressed in the Danish top league and in the Europa League and won the cup. His good performances were rewarded with an election as the best young player in Denmark.

“He signs a contract until 2027.”

The announcement came hours after manager Carl Hoefkens, in his cryptic message, confirmed that the midfielder was on his way to joining the club.

“I hope to see him (Onyedika) very soon with us,” Hoefkens said, as per Walfoot.

“I just want to work with the best players possible. I know he’s quality, so I’m looking forward to it.”

Onyedika will wear jersey number 15 for his new club.

Transfer Update: United Ready To Pay Record €140m For Osimhen

0

Manchester United are preparing a whopping €140m bid for Napoli striker Victor Osimhen before the end of the summer transfer window.

According to Il Mattino, a reputable Naples-based outlet, Cristiano Ronaldo’s agent, Jorge Mendes, has told the Serie A giants to expect a massive offer for the Nigeria international.

Mendes has been working to secure a move for Ronaldo, who wants to play in the Champions League this season.

Il Mattino claims that Manchester United are even willing to fund a large part of Ronaldo’s wages as part of a deal which would allow them to replace the Portuguese star with Osimhen.

The Serie A side are looking to sell the Nigerian to facilitate Ronaldo’s arrival from Old Trafford, with a deal that could be worth up to €140m expected to be discussed between the two clubs in the coming days.

Having narrowly won against Southampton on Saturday, many fans believe United lack a prolific goal-hungry striker and Osimhen could be the perfect fit to end United’s goals-scoring woes.

Napoli are reportedly keen to bring Ronaldo back to Serie A, as the veteran forward looks to leave Old Trafford to secure Champions League football. He has already offered himself to several sides in Europe, including Milan and Inter.

Napoli president Aurelio De Laurentiis is an admirer of Ronaldo and is willing to cash €140m for Osimhen.

Osimhen was once a target of Arsenal and Tottenham, but only fellow interested party Newcastle may be willing to splash over £100m on the star.

If Osimhen’s deal goes through, Ronaldo’s bogus £360,000-a-week wages will not be a problem for Napoli as Laurentiis plans to use Italy’s tax laws to aid his pursuit.

The law provides tax cuts for Italian clubs buying foreign players from abroad – which means Napoli could save 50 per

Meanwhile, Napoli boss Luciano Spalletti disclosed there is “nothing concrete” at the moment between Napoli, Manchester United and Cristiano Ronaldo, but explained it “wouldn’t be a swap with Victor Osimhen” if it did happen.

Speaking at a press conference, Spalletti said, “If you’re asking me if I’d like to work with Ronaldo, I tell you no coach would say no to that. However, if we go into those areas, the journalists like to fill in for themselves, then as Osimhen’s agent said, there are no negotiations.

“De Laurentiis, he told me that he received no offer, so let’s remain as realistic as possible here and take into consideration only things that could happen.

“There are only a few days left in the transfer window, it seems unlikely that could go through. There is nothing concrete at the moment.

“It wouldn’t be a swap, it would be two different signings, in that case. One of the two can turn a game by himself. But in any case, at the moment we should not consider things that won’t help us pick up three points in Florence.”

Osimhen has enjoyed a stellar start to the 2022/23 season, scoring in both opening Serie A matches as Napoli wallopped Hellas Verona and Monza via an aggregate score of 9-2.

Brought in from Lille in a club record deal worth €70m in 2020, the 23-year-old forward has experienced good fortunes in southern Italy.

A move to Napoli could be the answer to Ronaldo’s dream of playing in the Champions League this season.

Nigeria Working To Improve Hydraulicity Of Rivers Chari And Logone

0

Minister of Water Resources, Mr Suleiman Adamu, says the proposed Inter-Basin Water Transfer from Congo River into the Lake Chad is possible but expensive, and will require more consultations.

Adamu said this at a Media Forum themed: “Engage, Educate and Empower Nigerians on the Legacy Project of the Federal Ministry of Water Resources” in Abuja.

No fewer than 40 million people depend on the natural resources of Lake Chad.

He hinted that Nigeria was currently working to improve the hydraulicity of River Chari and Logone through dredging and improvement of the river banks.

He noted that this was crucial as environmental challenges like silting, new flood plains due to climate change, were affecting the lake.

“The inter-basin water transfer is supposed to traverse many countries, we are taking water from the Congo Basin and transferring it to another 400 km into Chad, it is technically feasible.

“But it is very expensive. It requires a lot of study and we are going to be using the existing rivers, so it requires a lot of planning. But what we are doing is to start with the low hanging fruit.

“So what we want to do is to improve the hydraulacity of river chari and river Logone, the two rivers are the ones that bring water into Lake Chad.

“In addition to the climate change issue, even when you have good rain, the water just flows into the banks and creates new floodplains rather than flow directly into the lake.

“So it’s a lot of technical issues to deal with before you finally talk about the money, And the money of course, it’s a lot of billions of dollars.

“One of the good things is that it has been taken as a PanAfrican project, but even at African Union, they are now talking about it seriously.’’

Speaking on the ministry’s dam projects, the minister said the River Basin Development Authorities were being revitalised to deliver on their mandates.

He noted that the Songhai model, as an integrated agricultural practice was introduced to boost agricultural production and achieve integrated rural development.

He said since his tenure, 253 farmlands have been leased to the private sector for commercial farming while 42 small dams have been constructed across the nation.

In 2017, the federal government successfully conducted a feasibility study towards recharging the Lake Chad through an inter-basin water transfer from the Congo basin at an estimated cost of $15 billion.

This is a part of the projects envisioned to transform the region into a more stable economic hub as the counter-terrorism and counter-insurgency operations against Boko Haram in the North-east draw to a close.

Tourism Industry: Tourists Flock Back To France Over Summer

0

Despite cost of living, heatwaves and wildfires, the summer 2022 is looking to have been good for the French tourism industry as local and foreign holiday makers swarmed the country after the COVID-19 pandemic rattled the sector during two years.

Tourism Minister Olivia Gregoire told a news conference that preliminary data showed the summer 2022 had been “exceptional”, with 35 million French people going on holidays, or seven out of 10 against six last year.

Meanwhile credit card spending during summer rose 10% from 2019 in French hotels and restaurants, she said.

France depends heavily on tourism, which generates 8 percent of national gross domestic product and provides two million jobs.

Data for July and the first half of August showed revenue per available room (RevPAR), a key gauge of performance for the hotel industry, was up 22.2% when compared to the Summer 2019.

RevPAR in the Paris region and the Riviera were up sharply, driven by a return of wealthy foreign tourists, notably from the United States due to a strong dollar, and from Gulf countries.

In 2019 France was the most-visited country in the world, attracting nearly 90 million foreign tourists.

“We want to remain the number one destination in the world,” Gregoire said.

When asked if France still targeted 100 million foreign tourists, Gregoire said: “It may not be impossible to reach that number, this is a target we can have,”

Floods Take Over Homes Temporarily In Makurdi

0

Floods have destroyed many property and rendered scores of residents homeless in Makurdi, the Benue State capital, Nigeria’s north-central.

Flood has over the last decade become a yearly routine, destroying property worth millions of Naira and causing losses of lives in some cases.

The areas are among the worst hit in the 2017 floods that displaced more than 120,000 persons in Makurdi.

At Agber Village, Mr James Igbawua said that the situation was beyond the community’s control, adding that they reported the matter to all relevant authorities over the years but no positive repsonse.

Igbawua said that, as a community, they could not do much as the situation required hundreds of millions to be addressed.

At Judge’s Quarters Extension, the situation was the same as waters overflowed a drainage system constructed on Ashavir Street, thereby rendering the residents with no access roads.

The disaster has also rendered many around the area homeless as the floods have taken over their homes temporarily.

In 2020, President Muhammadu Buhari inaugurated a 3.35-kilometre drainage channel to address ecological challenges facing Idye Community in Makurdi.

The channel has significantly reduced the effect of the floods around the axis but since the second and third phases of the project were yet to be constructed, there was no free flow of water, thereby causing more damage to areas like Agber, Achussah and Nyiman.

Commissioner for Water Resources and Environment, Dr Godwin Oyiwona had earlier disclosed that Idye Basin was the major cause of flood in Makurdi metropolis.

Oyiwona said that an undisclosed amount had been approved by the government for the cleaning of the Idye Basin that controlled most of the water flow within the town to River Benue.

He further disclosed that other areas that were not connected to the Basin were being treated separately to ensure that there was no longer flood in 2022.

He said government was doing everything possible to educate those residing along areas prone to flood, to reduce its impact on them.

He said flood, which became a yearly problem of the state, had over the years destroyed property worth billions of Naira and lives, adding that huge amount of money was needed to address it permanently.

Eko Clean Air: Lagos Advocates Circularity, Environmental Sustainability

0

Lagos State Government has expressed commitment to building the foundation of a circular economy in the state as well as advocating for environmental sustainability.

Mr Tunji Bello, Commissioner for Environment and Water Resources, stated this in Lagos while delivering a keynote address at the official unveiling of the “Eko Clean Air” project at Itedo community.

Represented by Dr Tajudeen Gaji, Permanent Secretary, Environmental Services, Bello said that he was excited to bring the advocacy on circularity and environmental sustainability to Itedo community in Lekki.

He said that the advocacy was a very clear and important sentiment expressed across multiple UN Sustainable Development Goals (SDG) goals, under the states localised initiative, with the theme “Eko for Clean Air”.

While citing the UN Environment Programme, Bello said that environmental sustainability through a circular economy involved making life choices that ensured an equal, if not better way of life for future generations.

While citing the World Bank and World Health Organisation, Bello noted that air pollution was considered a major environmental and health threat with an increasing economic burden.

According to him, the worst impacts of air pollution are felt in our informal and small-scale industries as well as our most vulnerable populations.

The commissioner said that the state, in its bid to combat environmental pollution and encourage sustainable development, has charged LASEPA with the responsibility of setting and enforcing environmental standards.

He added that LASEPA was also vested with the responsibility of adopting a proactive approach to environmental protection, promoting a circular economy, and ensuring that all state’s environmental resources are consumed in a sustainable manner.

He said that ensuring a seamless interface with communities and adopting a truly granular approach by adapting global best standards on circularity and sustainability to the unique Lagos ecosystem is a key expected outcome.
